Ingredients:

  • 8 oz high-protein chickpea or lentil spaghetti

  • 1 head broccoli florets, chopped small

  • 2 servings of protein of choice (e.g., chicken, tofu, shrimp)

  • 1 tbsp olive oil

  • 3 cloves garlic, mashed

  • 3 tbsp coconut aminos or tamari

  • 3 tbsp rice vinegar

  • 3 tbsp maple syrup

  • ½ tsp sesame oil

  • ⅛ tsp red pepper flakes

  • 2 tbsp tahini paste

  • 2 green onions, sliced

Directions:

  1. Cook the Pasta and Broccoli

    • Bring a large pot of water to a rolling boil. Add the spaghetti or thin noodles and cook for about 8 minutes, or until tender. *Use a large pot as chickpea and lentil will foam up while cooking!

    • Chop broccoli into small florets, and then add the broccoli to the boiling pasta during the last 2 minutes of cooking.

    • Drain the pasta and broccoli, then set aside.

  2. Prepare the Protein

    • Heat 1 tablespoon of olive oil in a large sauté pan over medium heat.

    • Add the protein of your choice and sauté until cooked through. Once cooked, add the pasta noodles and broccoli to the pan.

  3. Make the Sauce

    • In a small bowl, stir together the coconut aminos, apple cider vinegar, maple syrup, garlic, sesame oil, and red pepper flakes.

  4. Combine the Dish

    • Pour the sauce over the top of the pasta, chicken, and broccoli and toss to coat.

    • Next, stir in the tahini paste, tossing until the residual heat melts the tahini and blends it into the sauce.

  5. Serve

    • Sprinkle sliced green onions over the top and serve warm.

Enjoy your delicious and nutritious Tahini Noodles with Broccoli!
