Wild Salmon, Asparagus, Sweet Potato Sheet Pan Dinner

Ingredients:

1 Small sweet potato, peeled and baton cut

5-8 Asparagus spears, ends removed

1 Wild sockeye salmon filet

1/2 of a lemon, juiced

1.5 Tbsp of olive oil

1 tsp dried rosemary

1 clove garlic, minced

Salt to taste

Directions:

Preheat oven to 425 degrees Fahrenheit. Next, on a sheet pan lined with parchment paper, arrange the sweet potatoes on one side of the pan. Place in oven and bake for 12 minutes. While the sweet potatoes are baking, use a small bowl and mix together olive oil, lemon, rosemary, and garlic. Once the 12 minutes is up, carefully remove the sweet potatoes, and add to the pan the salmon and asparagus. Next coat/brush the asparagus, sweet potato and salmon with the oil mixture. Add some salt and then pop back in oven and bake for 10-12 more minutes.
