Hey, I'm Amber, and I want to share the surprising journey that led me to discover a little-known approach to eating that helped me lose 15 lbs, clear my autoimmune flare-ups, and reclaim my energy—without even trying.
The doctor tested for everything, and my labs came back all over the place and my blood pressure was high. It seems my body wasn’t absorbing nutrients properly, likely due to my celiac disease wreaking havoc on my gut. This was a wake-up call. I immediately started on the autoimmune diet—a strict, restrictive approach I knew could work because, as a nutritionist, I'd seen it help others. But it was hard to do, time-consuming, and confusing - even to me, a veteran nutritionist, herbalist and personal trainer. I also knew that since I wasn’t absorbing nutrients properly, I needed to over compensate by adding IN as much nutritious foods as possible.
So I started to crowd my restrictive autoimmune diet by adding in 30+ nutrient-diverse plant foods a week. Almost over night, I started to feel and look better. The weird bonus was that my weight dropped off effortlessly, my skin cleared, my brain fog lifted, my blood pressure normalized, and I felt more like myself than I had in years.
Earlier this year, I was pushing myself hard, working long hours, and teaching a 10k run clinic in the evenings. I was following a mostly vegan diet, and averaging 22,000 steps a day. I felt exhausted, bloated, inflamed, and my psoriasis was at its worst—on my eyelids, in my ears, and covering my knees and elbows. But the real scare came when I woke up one morning to find a petechial rash spread across my chest.
You guys, I lost 15lbs in less than 90 days, and I could literally feel the inflammation leaving my body!

It’s ironic because I’d been eating vegan and running for years, yet I wasn't seeing results. My psoriasis was still painful, itchy, and even bled at times. No matter how much I tried to tackle my weight, inflammation, and skin issues, I felt like I was getting nowhere. I'd tried everything—low-carb diets, intensive workouts, fasting—but nothing made a lasting difference.
For a long time, I thought the problem was me, that I just wasn’t trying hard enough, working out enough or using the right approach. But here’s what I finally understood: it wasn’t my fault. The information out there is confusing, advice conflicting and many solutions are either inaccessible due to cost or just not practical.
But then, I stumbled upon this “crowding in” approach and combined with finding my personal food triggers, it changed everything. Now, I’m ahead of the game with managing my autoimmune issues, inflammation, and weight—all without the restriction and burnout I’d been used to.
What's great about this way of eating is that it still allows room for some flexibility with fun, enjoyable foods—even if they aren’t always the most nutritious.
